Plant-Based Beverages from Germinated and Ungerminated Seeds, as a Source of Probiotics, and Bioactive Compounds with Health Benefits—Part 1: Legumes

Consumption of plant-based milk replacers has increased in recent years due to health benefits, benefits attributed mainly the content phenolic compounds, fatty acids, or bioactive compounds with antioxidant activity. In this context, we proposed obtain two types less studied beverages, namely lupine and chickpea as well possibility getting these beverages using germinated seeds even obtaining probiotic drinks through fermentation Lactobacillus plantarum 299v. To evaluate quality obtained products, determined their proteins, organic volatile compounds. We evaluated activity herbal drinks, a load microorganisms present after process. Both chickpeas are legumes high protein range benefits. Fermentation L. introduces properties enhances nutritional profile beverages. Plant-based inoculated can offer convenient way incorporate probiotics into diets, providing consumers both nutrition supplementation.
